SUMMERY BERRY PAVLOVA 

Anyone else felt super summery recently? The weather has been lush and now berries are back in season I have been living for my sisters summery pavlova! Lola’s recipe is really fun to make and if you want to attempt it please send us or tag us in your photos of the finished product.

What you will need:

  • 250g of icing sugar
  • 4 egg whites
  • 450ml of whipping cream or double cream
  • a variety of berries

What you need to do:

  • Begin by preheating the oven to 150 degrees Celsius/Gas mark 2/ 300 degrees Fahrenheit
  • Separate the egg yolk and egg whites – this can be a bit tricky – use the egg shell to transfer the yolk from one half to the other, letting the white drop in to a bowl below
  • Sieve in the sugar to the whites and whisk (on full speed if you’re using a machine, or as fast as you can if you’re doing it by hand!) until stiff peaks appear
  • Transfer the mixture to a baking tray lined with greaseproof paper and spread the mixture into a rough circle
  • Bake for half an hour or until your pavlova is crisp to the touch and can be easily removed from the baking tray
  • Turn off your oven but leave your pavlova in there while you whip your cream
  • Whip the cream until it has thickened
  • Take your pavlova out of the oven and spread the cream over the top
  • Add your berries and enjoy!
